Native to the Mediterranean area, ancient Romans regarded Dill as a symbol of vitality and it was sprinkled on food given to gladiators. It was also thought to have magical properties that could ward off evil and enhance love potions. It is a member of the parsley family and has a distinct parsley-like aroma with a hint of anise. Try to add Dill to a dish at the end of cooking as it tends to lose it's flavour if over cooked.
SUGGESTED USES: Dill tips go well with any seafood dish. It is also a great addition to potato salad, or try mixing it with crème fraiche or plain yogurt and serve with cucumber. Dill and capers are a must with smoked salmon. Also awesome on omelets and, of course an essential ingredient in making dill pickles.
