Most pork rubs chase heat. This one chases flavour.
We built ours around two ingredients you won't find in a standard spice rack: maple sugar and black garlic powder. Maple sugar caramelises beautifully under heat, creating a deeper, less cloying sweetness than ordinary brown sugar. Black garlic brings a slow-roasted mellow richness — earthy, slightly sweet, with none of the sharpness of raw garlic — that anchors the whole blend.
Three varieties of chili — chipotle, cayenne and dried chilli — are blended at carefully judged levels to build warmth gradually, adding complexity rather than fire. Smoked and sweet paprika, thyme, coriander and a touch of Ceylon cinnamon complete the picture.
The result: a rub with real depth and character, crafted to bring out the best in British pork.
