Grown for thousands of years in Asia, it has been used as a flavoring agent and an insect repellant. It grows primarily in tropical regions where a lemon tree, if you could find one, would not be thriving. It has high citral levels which is also found in lemon rind. Its citrusy, peppery, and refreshing flavor is robust and will not break down with cooking. The powder has the advantage of dissolving in dishes where fresh lemongrass must be removed before serving.
Suggested uses - It is common in asian curries, soups and stir-fries. One teaspoon is roughly equivalent to one stalk of fresh lemongrass. Cook with fats like coconut milk to extract the oil-based flavor compounds.. Use in place of lemon peel for a hint of pepper.
