Juniper Berries have been valued for medicinal properties for thousands of years. Juniper trees are male or female and it is the small seed cones of the female plant that we use in cooking and call ‘berries’. Like dry Gin, the aroma is woody, piney, resinous and floral. Juniper has the ability to freshen a dish especially of fatty meats like pork, lamb and duck. The berries should be crushed or ground right before using them to preserve their volatile oils which will evaporate quickly.
Suggested uses - It works well in rubs and marinades for most meats, especially game. Pairs well with citrus preserves and sorbets. Try crushed berries on chocolate mousse.
