The origins of garlic are obscure and it is believed to have been cultivated before recorded time. Several bulbs were found in pharoah Tutankhamuns’ tomb and it was given to Roman soldiers before battle to give them courage. Garlic becomes sweet and more moderate when cooked. Used in moderation it can heighten and balance other strong flavors.

Flavor & Substitution Garlic powder is more concentrated than fresh garlic. A good rule of thumb is that 1/8 teaspoon of garlic powder equals roughly one small clove of fresh garlic. It blends seamlessly into dry rubs, spice mixes, and sauces without the texture of fresh garlic.

When to Use It Over Fresh It works best in dishes where you want even distribution without chunks — think dry rubs for meat, seasoned breadcrumbs, soups, stews, and dressings. It's also ideal when cooking time is short and fresh garlic might not have time to mellow.

Adding It to Dishes Add garlic powder early in cooking when you want a deeper, more integrated flavor, or toward the end for a sharper punch. Because it's dry, it can scorch quickly in a hot dry pan, so it's best added with some liquid, fat, or other ingredients present.
