Fenugreek is a member of the Pea family of plants. Native to Asia and Southern Europe, the seeds are golden brown with what looks like a thin knife cut on one side. In Ayurvedic medicine, it was used as medicine for hair loss and skin complaints. The seed’s aroma is slightly spicy, sharp and woody. When the seeds are lightly roasted (over-roasting tends to make them bitter) they become nutty and taste a little like burnt sugar and maple, which is why it is not surprising that it is a key ingredient in artificial maple syrup.
Suggested uses: often toasted and ground and added to curry blends
