This is the fruit of a tropical plant related to ginger, and is one of the world’s most expensive spices, as growing cardamom is extremely labour-intensive. Its flavour profile is eucalyptus-like, floral, minty and slightly citrusy.
How to use: Cardamom has a strong flavour, and should be used sparingly. Bruise whole pods before using, dry toast or heat with a little oil to bring out the flavors. Chai tea and Arabic coffee.
