The botanical name for Sage is derived from the Latin word salvere which means “to save" or “to heal”, and the medicinal properties have been known for centuries. Sage tea was a popular beverage before conventional black tea was available. The flavor is herbaceous and astringent with a high pungency level like rosemary and thyme. It can be overpowering but when used in moderation it is an excellent addition to full-bodies soups, stews, and its astringency helps balance fatty dishes like pork and duck. It is the star of stuffing and when the leaves are fried whole, they make a delectable garnish.
